Kalua Pig Anticipation

Hi All,

This will be a very short post tonight. First, the Saints won, so GO, SAINTS! Since Carolina didn't do squat this year, it's great that the Saints won although I couldn't care less, it's just that New Orleans is closer to Georgia than Minnesota, LOL.

Anyway, tonight I've started my infamous Kalua Pig. I got the recipe from another blogger (La Fuji Mama) and have been dying to make it! It only has 3 ingredients and I've heard rave reviews. It's probably going to take around 13-16 hours or so to cook, very, very slowly, so I'm hoping it'll be delicious! I'm hoping to eat it for dinner tomorrow night. I'll either be making some cabbage or chestnut rice, also from the same blogger. I can't wait..you know I'll be taking pics!

Healthy Lunches-Greek Steak Pitas with Navel Oranges



Today I'm REALLY late with my post as I've been pretty busy today. I had Photoshop installed on my laptop so that hopefully my photos will be better or at least I can make them LOOK better if I took a lousy picture, LOL.

So today I made a fairly simple, yet delicious meal, Mediterranean style! It was Greek Steak Pitas with Navel Oranges. As you know, Greek food usually includes pita, cucumbers and feta cheese and these are no different. Spincah is thrown in there as well, which adds a little tanginess when sauteed with lemon juice. These came out really good and for 2 pitas were only 427 calories (with the oranges it was 450 calories). Because flank steak was used, which is a tougher cut of meat, you DO have to chew harder (and longer), but it is definitely filling.

I added the navel oranges, because with healthy eating, I also want to include seasonal foods as much as possible. Oranges are a winter fruit, believe it or not, although it's usually associated with the summertime.

Fun fact: Navel oranges were first "discovered" in Brazil. The navel part is actually a smaller fruit attached to the main fruit, which you can see when you peel and seperate the orange.

Healthy Lunches-Coconut Curry Chicken Soup




Welcome everyone to our blog, Healthy Lunches from Sunday's Catering!



I will be showing pics and talking about our newest venture with catering Healthy Lunches for people who want to eat healthy but find it hard to find delicious, available, and of course, healthy meals.

Healthy meals can be more than just boring salads and wraps. Healthy and good do not have to be mutually exclusive. Most of our meals are under 450 calories and are wonderful, if I do say so myself.

So for today's lunch, I made a Coconut Curry Chicken Soup that is Thai-inspired. For two (2) cups soup, it's only 315 calories! That allows you have a filling, healthy lunch for UNDER 400 calories and allows you to eat more of other things!

This dish employs pad thai noodles, lite coconut milk, some red curry paste and a secret ingredient that adds tons of flavor although the smell can definitely be a little off-putting, shall we say, LOL. It also has turmeric, an Indian spice, which has TONS of health benefits, such as stimulating the metabolism of fats (which promotes healthy weight loss), aiding in digestion, aiding blood circulation and purifying it, strengthening natural immunities, strengthening the bones as well as many, many other uses. This soup is definitely more than meets the eye!
